About Dadu's Besan Burfi
Besan Burfi is one of the most enduring sweets in Indian mithai tradition. Made from roasted gram flour (besan), pure ghee, and sugar, it is a dense, richly flavoured sweet that has been a fixture at Indian festivals, celebrations, and tea tables for generations. The quality of a Besan Burfi is determined almost entirely by the quality of the ghee used and the patience with which the besan is roasted. Rush the roasting and the raw flour taste never fully disappears. Use low-grade ghee and the richness that defines the sweet is simply not there.
At Dadu's, we have been making Besan Burfi the correct way since 1983. The besan is slow-roasted in pure desi ghee until it reaches a deep, nutty aroma before the sugar is incorporated. Each batch is poured, set, and cut by hand. The result is a Besan Burfi with a smooth, fudge-like texture, a pronounced ghee fragrance, and the kind of clean sweet finish that only comes from real ingredients handled with real care.
What Makes Dadu's Besan Burfi Different
Slow-Roasted Besan in Pure Desi Ghee
The defining step in making a great Besan Burfi is the roasting. We roast our gram flour slowly in pure desi ghee over a controlled flame until the colour deepens and the nutty fragrance develops fully. This process cannot be rushed without compromising the final flavour. Most commercial producers shorten this step to save time. We do not.
No Artificial Colour or Flavouring
The golden yellow of Dadu's Besan Burfi comes from the roasted gram flour and ghee, not from food colouring. Many mass-produced versions use artificial yellow dye to achieve a uniform appearance. Our colour varies slightly between batches because it is natural, and that variation is a sign of authenticity.
Hand-Cut, Not Machine-Sliced
Each tray of Besan Burfi is set and then cut by hand. The pieces you receive will have the slight irregularity of handmade work rather than the perfectly uniform slabs produced by commercial cutters. This is intentional. It is how mithai is supposed to be made.
Topped with Real Almonds
Each piece is finished with slivered almonds on top. These are not decorative. They add a textural contrast to the dense burfi and are placed by hand on each piece before the tray is fully set.
